Sun-Dried Tomato Pesto Penne | prep & cook 25 minutes | Ingredients: 12oz penne pasta, 1 jar of sun-dried tomatoes, 2 garlic cloves, salt & pepper, 1 cup of fresh basil, 1/2 cup fresh parmesan
While you cook your pasta to perfection, blend the sun-dried tomatoes (in oil), garlic, basil, salt & pepper until tomatoes are finely chopped. Stir in parmesan to tomato mixture in a large bowl. Add the cooked pasta and a bit of cooking liquid from the drained pasta to moisten the dish. Serve and Enjoy!
Snow Pea & Avocado Slaw | prep & cook 15 minutes | Ingredients: 10 oz of snow peas, 2 ribs of celery, toasted walnuts, 2 avocados, chives, olive oil, lemon juice, salt & pepper
Thinly slice the snow peas, celery, chives and avocado. Gently toss these fresh veggies with olive oil, lemon juice, salt & pepper. Garnish with toasted walnuts and serve!
Stuffed Mushrooms | prep & cook 35 minutes | Ingredients: 12 large white mushrooms. 1/2 cup baby spinach, 1/2 onion, 2 garlic cloves, 1/2 cup cherry tomatoes, 3 tbs Romano cheese, 3 tbs panko breadcrumbs, 2 tbs olive oil, 2 tbs parsley, salt & pepper
Preheat the oven to 325 degrees F. Prepare a baking sheet with a light coat of olive oil and place mushrooms caps (remove stem) facing up like a bowl. In a medium pan, heat 1 tbs of olive oil over medium heat. Add finely chopped spinach, onion, garlic and tomatoes. Stir until spinach wilts then remove from heat. Use a tablespoon to add the spinach mixture to each mushroom. Sprinkle with bread crumbs and Romano cheese. Bake until mushrooms are cooked to desired tenderness. For an Italian twist, try dipping in your favorite tomato sauce!

Tanqueray Cucumber & Mint Re-Fresher | 1 bottle Tanqueray Gin, 1 cucumber, fresh mint & tonic water
Start this wonderful combination off with the fresh mint and Gin! Place 4-6 fresh mint leaves into a cocktail mixer then pour 1 shot of Tanqueray Gin over the mint. Use muddle to smash the mint up with the Gin. Add desired amount of tonic water and garnish with a thin slice of cucumber in the glass and lime on the rim!
